We recently discovered a new vegetable – at least new for our family. Sunchokes, of the sunflower family, are native to North America where the natives called them “sun roots”. They look like small, knobby potatoes but crunchier, sweeter and do have a slight taste of artichoke. They are very low in starch and can be eaten raw, or simply scrubbed and baked/roasted. We prepare our mouth-watering recipe with some of the most common spices like garlic powder and sea salt, but we enhance the flavor by adding our very own Mama Mel’s Peppa Sauce. Ingredients:
Wash and slice about 5 Sunchokes in a pan
Drizzle with olive oil
Sprinkle with oregano
Dash of sea salt
Sprinkle with garlic powder
Sprinkle with cayenne pepper (or any of your favorite spices to add a kick – a drop of Mama Mel’s Peppa Sauce toss with the Sunchokes adds bold flavor)
Roast on 425 °F for about 10 to 15 minutes
Hint: 10 minutes will give you more of a water chestnut crunchy consistency and 15 minutes will give you a slight crunch, but more of a potato texture.
