Those that know us, know they can count on us to provide guacamole for any gathering with friends and family. Through our journey exploring flavors we’ve come up with creative ways to keep guacamole interesting – and thus Chipotle Quinoa Guacamole was born. We love the smokiness of the chipotle peppers in the quinoa and it pairs nicely with the guacamole. Not to mention, adding quinoa is a healthy way to stretch your dish for those wonderful family gatherings. Since we love our new recipe so much, we thought we’d share with you.
Ingredients:
- 1 Cup of red quinoa (or a blend of white and red) for every 1 ¼ cup of water
- 1 Dried chipotle pepper
- 2 Garlic cloves
- 4 Green onions
- 2 Shallots
- Olive oil
- 4 Avocados
- Cherry tomatoes (as many as you’d like)
- Cilantro (as much or as little as you prefer)
- Garlic power (as much or as little as you prefer)
- Sea salt (enough to taste)
- Smoked paprika (as much or as little as you prefer)
- Chipotle chili powder (as much or as little as you prefer)
- Cayenne pepper (as much or as little as you prefer)
- Cumin (dash)
- 1 Lime (1/2 if you prefer less)
Sauté dried chipotle peppers, garlic, green onions and shallots in olive oil
Bring water to a boil and add quinoa, cover and simmer on low for about 15 minutes
Add the chipotle pepper sauté when the water is just about boiled out; season with smoked paprika, dash of sea salt, garlic powder and chipotle chili powder
Cut up avocados, cherry tomatoes, cilantro and green onions in a bowl
Add garlic powder, sea salt, smoked paprika, dash of cumin, cayenne pepper and squeeze a fresh lime into the bowl
Blend the avocados together and continue to season to taste if needed
Serve the guacamole and chipotle separately with blue corn chips or mixed together
There will be a flavor party in your mouth!
