A great friend once shared a wonderful roasted chickpea recipe with our family – so I thought I would share we you. Roasted chickpeas are a great snack and can be a good substitute for almonds and cashews and other nuts. This is a yummy recipe that can be used with any of your favorite flavors and spices. Experiment with sweet and savory flavors, as well as bold, spicy flavors. Pack these delicious snacks for lunch or on the go. You can create your very own family recipes. Ingredients:
- 1 (15 ounce) can organic chickpeas, rinsed and drained with skin removed
- 1 ½ tablespoons olive oil
- 1 tablespoon cumin
- 1 teaspoon chili powder
- ½ teaspoon sea salt
Preheat oven to 400 °F
Take rinsed and drained chickpeas and rub with a paper towel to remove excess moisture. Spread chickpeas in a single layer on a foil lined baking sheet and dry roast in oven for 20 minutes. Shake them 1-2 times to ensure they cook evenly.
While they are dry roasting, combine all other ingredients and whisk.
Combine hot chickpeas with oil and spice mixtures. Spread chickpeas in a single layer on a foil lined baking sheet and roast in oven for an additional 15 minutes until brown and crispy!
Hints: You can use store brand chickpeas and forgo organic. They may be softer, requiring a longer dry roasting time, and have more skins to remove.
